Kidney of mangalica, heart, liver, guts. These chitterlings are consumed with great pleasure as beer nuts in Japan. Once upon a time these dishes weren’t repugnant in Europe.

The Hungarian Association of Gastronomy has organized a workshop where Japanese specialists presented how to prepare such dishes and we have documented this event.
